My family loves muffins! I am constantly checking out new recipes on Pinterest to try something new. Since I am making Almond Milk, I am able to make my own almond flour. Almond flour is great for baking gluten-free.
One of my favorite recipes is banana bread. It is so simple to make and I always have a few overripe bananas around. My kids like muffins so I decided to make some Banana Bread Muffins! This simple recipe doesn’t require much.
Banana Bread Muffins
1/2 cup applesauce (or butter)
3/4 cup sugar
3 overripe bananas
1 teaspoon baking soda
2 teaspoons cinnamon
1 1/2 cups of almond flour (whole wheat or all purposed works, or a combination)
Cream the applesauce or butter with the sugar and add in the eggs. Then add in the mashed bananas. Blend in the cinnamon and baking soda. Lastly add the flour. Preheat oven to 350 and bake for 22-25 minutes. Enjoy!
I was able to use my new set of Kitchen Made Stainless Steel Measuring Cups. I had a trusty pair of plastic cups but I have dropped and broken a couple. It is hard to make certain recipes when you are missing certain measurements! The best part about these measuring cups is that they come in 6 sizes: 1/4, 1/3, 1/2, 2/3, 3/4, and 1. I love having having all the in-between sizes; it makes measuring so convenient!
Each cup also has inside measurements so you can follow the outside measurement or use any of the inside ones. The ml and cups measurements are engraved into the cups so they won’t rub off. The cups are durable and I know they will last forever compared to my fragile plastic ones. They are made with top quality polished stainless steel. The cups nestle nicely and don’t take up a lot of space.
